Zack Kouns

Zack Kouns works in varied capacities such as lecturer, fermentation missionary, ecumenical journalist, bandleader, performer, author, visual artist, film maker, researcher, prankster, and composer.
He has been transfixed by fermented foods ever since he had his first bubbly, drink of Smreka in a tiny Bosnian village many years ago and began his experiments with the microbial and bacterial world soon after. This journey of food preservation has led him to incorporate foraging, another passion of his, into the ferments that he works with to create truly wild medicinal fermented foods.
A life-long resident of rural Appalachia, the region in its juxtaposition of beauty, brutality, love and poverty also plays heavily into the aesthetic of Kouns' work. Perhaps as a way to evaluate his place of birth through comparison, Kouns has a definite mandate to carry out adventures abroad. Through his exploits, Zack Kouns has conducted lengthy lecture and musical tours in North and South America, as well as Europe and Australia, with ambitions to perform on all seven continents
Workshop #1: "Foraging and Fermentation: The Ancient Diet"
This class will highlight and discuss the history of fermentation and foraging and their contextual role in the survival and advancement of the human species. Then, if time and weather allows, the participants will embark on a brief nature walk, where we will discuss and gather wild edible plants. When we return, a hands on workshop will be provided on how to use the plants to make a simple wild fermented sauerkraut so that the harvest will be preserved!
Zach will also be doing some super cool Theta Wave & Binural Beats into the FREE Healing Tent!!
